Ingredients

  • 5 russet potatoes
  • 2 cups water, divided
  • 3 carrots, peeled and diced

Method

  1. Peel and cut potatoes into ½-inch dice.
  2. Place potatoes inside Instant Pot. Add 1 cup water.
  3. Secure lid and pressure cook on high for 5 minutes. Do a quick pressure release. Remove lid.
  4. Strain potatoes and place in bowl of cold water to cool.
