Method

  1. Place chicken breasts and chicken stock into Instant Pot. Pressure cook on high for 30 minutes. Let pressure release naturally.
  2. When steam has released, remove lid and carefully shred chicken breasts. Add them back into stock.
  3. Add crushed garlic clove, onion, red pepper, tomatoes, bay leaves, and zest and juice from 2 limes. Pressure cook on low for 3 mi
