  • 3 egg yolks
  • 1 egg
  • 100 g/ oz

Method

  1. Using an electric hand mixer, whisk together the egg yolks, egg, sugar and rum in a heatproof bowl over a pan of just simmering water. Whisk until thick and creamy.
  2. Remove from the heat and fold in the melted chocolate, cream and toasted hazelnuts.
  3. Spoon evenly into 8 x 100
