Method
Using an electric hand mixer, whisk together the egg yolks, egg, sugar and rum in a heatproof bowl over a pan of just simmering water. Whisk until thick and creamy.
Remove from the heat and fold in the melted chocolate, cream and toasted hazelnuts.
