The main ingredient for guacamole is avocado, which is spiced up with chillies and other flavours. Guacamole should be used almost immediately as after a while the avocado will begin to discolour. Chopped red and green peppers can also be added and lemon juice can be used in place of lime. Here’s a recipe for two generous portions:

Ingredients

  • 2 ripe avocados, peeled, halved and stoned
  • The juice of 1 lime
  • 2 shallots or

Method

Chop the avocado and fork in the lime juice. Add all the remaining ingredients and season with salt and pepper.
