The fried slice is a 2 cm (3/4 in) piece of brioche, soaked in a cream, egg and sugar mixture and then shallow-fried in butter. It’s served with a loose, fresh blackberry-jam sauce spooned on top with melting extra-thick cream. Yum!
Whisk together the eggs, sugar and cream. Soak both sides of the brioche in the cream for a few minutes. Melt the butter in a large frying-pan on a medium heat. Shallow-fry the slices for 2–3 minutes on both sides. This will give a golden brown, slightly crisp texture, leaving an almost warm ‘doughnut’ consistency inside.
