These are best made by using the sweet, thick, fleshy medjool dates which grow in Egypt and California. Although they are on the expensive side, they are worth it. The fritters are made by stoning the medjool dates and filling them with orange-zest-flavoured mascarpone. Once battered and deep-fried, the mascarpone just melts in the mouth as you bite through the batter. I normally serve these with Cinnamon Ice-cream, along with either Orange and Rum or
