The word ‘muhammara’ can mean both ‘roasted’ and ‘red’ and can also (though not here) refer to the use of paprika in a dish to bring a smoky depth of flavour and reddish colour. Muhammara is Syrian in origin, moving freely to Palestine and Lebanon when the Levant was a single territory.
