This is a great way to use up leftover cooked rice, if you have any (but also delicious enough to start from scratch if you don’t!). If you do this you’ll need to start with 190g of cooked rice. Eating leftover rice is fine, as long as you chill what you are not going to use soon after it’s made, rather than letting it sit around at room temperature for too long. Take it out of the fridge about 20 minutes before you want to eat the tabbouleh, though: you don’t want it to be fridge-cold. You
