Harisa (not to be confused with harissa, the spicy North African chilli paste!) also goes by the name basbousa or namoura, depending on where in the Levant it is being made. Either way, it’s a sugar-syrup-soaked semolina cake, popular all over the Middle East. Traditionally, the dominant flavours are rose or orange blossom water, but we’ve replaced these flavourings with the less traditional combination of coconut and lemon zest. Our harisa is super sticky and sweet so you’ll only need a sm
