In the summer, street vendors sell glasses of this in the old centre of Cyprus and I am not sure that there is anything else quite so refreshing. The salt really brings out the flavours. It may be an acquired taste, but I love it every now and then on a really hot day. You could also serve something like this as a cold summer soup, perhaps adding some diced cucumber.


  • 185 g (¾ cup) not-too-thick plain yoghurt
  • 125 ml (½ cup) ice-cold water
  • 1 teaspoon dried mint
  • about ½ teaspoon salt
  • crushed ice


Mix together the yoghurt, water and mint and season with the salt, checking for flavour and adjusting the salt to your taste. Scatter the crushed ice over the top and serve.
