I love the coriander in these olives. By all means use a little less if you feel it may be overpowering, but the flavours really do work beautifully in this typical Cypriot recipe. Sometimes it’s hard to pit olives, so either leave them unpitted or, if you prefer, buy about 450 g (1 lb) of pitted
