Here is another version of an uncooked tomato sauce, which you can try in summer when tomatoes are at their very best.
Peel the tomatoes and cut them lengthways into long thin slices. Put in a bowl with the olive oil, basil, lemon juice and garlic and season with salt and pepper. If the tomatoes are at all bitter you could sprinkle a teaspoon or so of sugar over them. Toss them around a bit, then cover and leave in the fridge for 3 or 4 hours.
