You could use a honey lightly flavoured with lavender or eucalyptus that will show up in the taste of your ice cream, but just a plain runny honey will do. You might like to add a couple of egg yolks to the cream for some extra richness, but I love this wholesome and simple. Your ice cream may not freeze completely firm, depending on your choice of honey — instead it might have a lovely creamy texture.
