Toss the potatoes, courgettes, aubergine and red pepper with 2 tablespoons of the olive oil in a roasting tray. Roast the veg in the oven at 180°c fan for 20 minutes, then nestle in the fish fillets and top with the tomatoes and lemon slices. Sprinkle over the lemon zest, drizzle with the remaining olive oil and then return the tray to the oven for 15 minutes.
