For all the grazers out there, these are brilliant as a snack or even a canapé. They’re delicious served warm or, as my children like them, eaten straight out of the fridge!
Simmer the sweet potatoes until soft. Heat a pan and add the oil. Soften the onion for 3 minutes, then add the ginger, garlic, curry powder, tomato purée and salt.
Drain the sweet potato and mash into the spice mix. Cook for another 2 minutes before adding the spinach. Add a splash of boiling water so that the spinach wilts.
