These always go down a storm, either as a light lunch or an evening meal. They’re great served with baked beans or salad on the side!

Ingredients

  • 4 baking potatoes
  • 8 rashers of streaky bacon, cut into strips or 4 chorizo sausages, chopped into 1cm pieces

Method

Bake the potatoes in the oven at 180°c fan for 1 hour. Allow to cool so they can be handled, then halve the potatoes and scoop out the fluffy middle. Meanwhile, cook the bacon or chorizo pieces in a frying pan for 4 minutes until slightly coloured.
