Chorizo adds a beautifully smoky, piquant flavour to everything it is combined with and in this recipe the white fish really benefits from having the punchier sidekick. I’ve added cubed potatoes, mushrooms and green beans to make this quick and easy 30-minute recipe a complete family meal.
Heat the oil in a large pan. Add the cubed potato and colour for 10 minutes before adding the onion and garlic. Continue to colour for 5 minutes.
Add the chorizo and thyme, cook for 5 minutes, then add the mushrooms, beans, lemon juice and some seasoning. Give the pan a stir then place the cod fillets on top.
