This dish is quick enough to knock up as a midweek meal, but the beautifully flavoured tarragon sauce makes it decadent enough to serve for a dinner party too. Serve with jacket potatoes, roasties, skinny fries, rice or you can even flake the salmon into the sauce and stir it through pasta.
Remove the skin from the salmon fillets while you heat the butter in a non-stick pan. Add the salmon fillets to the pan and cook for 2 minutes on each side before transferring to a warm plate.
Add the oil and shallots to the same pan, cooking for 2-3 minutes before adding the mushrooms. Season well with salt and pepper. Sauté the mushrooms for an additional 2 minutes.
