This has been one of my most popular traybakes. It is quick and easy to prep, making it perfect for a weeknight, but it’s also a great weekend option. Serve with a side salad or green veg.
Season the chicken thighs with salt and pepper. Heat a roasting tray or casserole dish on the hob, add a good drizzle of oil and place the chicken in skin side down. Leave it untouched for a good 5 minutes so that the skin crisps, then set aside.
