Ingredients: 4 baking potatoes; 2 tbsp olive oil; 8 good quality pork or vegetarian sausages; 8 good quality pork or vegetarian sausages; 1 red pepper, chopped; 1 onion, chopped; 1 leek, chopped; 4 cloves of garlic, crushed; 2 x 400 g tins of mixed beans; 400 g chopped tomatoes; 1 tbsp tomato purée; 2 tsp smoked paprika; 1 tsp crushed fennel seeds; 1 tsp chilli flakes; 100 ml vegetable stock

If you regularly find yourself descended upon by a hoard of children, this recipe will be your saviour. With or without the potatoes, a pan of this will go down a storm.

Ingredients

4 baking potatoes
2 tbsp olive oil
8 good quality pork or

Method

Rub the potatoes with a little olive oil. Put the potatoes directly on the rack in an oven at 180°c fan to bake for 1 hour.

You can leave the sausages whole or slice them so the stew can be eaten with a fork, as preferred. Heat a pan, add 1 table
