This is my much simpler version of chicken parmigiana, the flavour of which belies the limited effort required to make it. It works well with mash, jacket potatoes, a simple side salad or even pasta: whatever you have to hand!
Heat an ovenproof frying pan and add the olive oil. Season the chicken breasts well with salt and pepper, then sear them for 2 minutes on each side. Remove from the pan and set aside.
Turn down the heat and cook the chopped onion and garlic in the same pan for 2 minutes. Add the white wine, followed by the tomatoes. Bring to a simmer.
Return the chicken to the pan and let it sim
