A puff pastry tart is a wonderfully simple construction and with so many possible variations, they are a perfect way to shake up your midweek offering. These are two of my favourite combinations, but feel free to let your creativity run wild here and experiment with other flavour combinations you like.
For either tart, lay the pastry on a lined baking sheet. Score a 2.5cm border around the edge of the pastry and brush this with the beaten egg. Put in the oven at 180°c fan for 5 minutes.
Spread the pesto over the pastry within the border you created, then scatter the asparagus spears, feta and pine nuts evenly on top. Ba
