As its name suggests, this one pot dish is cooked in booze! You could use red wine, but I love the slight sweetness that a sherry brings. Pork cheeks, an underrated cut, work brilliantly in this recipe, though pork shoulder may be easier to find.

Ingredients

  • 2 tbsp flour
  • 1 tsp salt
  • ¼ tsp

Method

Combine the flour with the salt and pepper, then toss the pork in the seasoned flour and sear in batches in a large casserole dish over a high heat until each piece has some colour. Use as little oil as possible because both the pork and chorizo will create their own oil.
