Also known as Hunter’s Stew, Chicken Cacciatore is a rustic Italian dish packed with Mediterranean flavour. I’ve written this recipe so that it works as a traybake, but it can be easily adapted for cooking on the hob as outlined below in the method.

Ingredients

  • 8-12 chicken portions
  • Salt and pepper
  • 1 tbsp olive oil

Method

Preheat the oven to 180°c fan and if using dried porcini mushrooms, soak them in 100ml of boiling water. Season the chicken with salt and pepper.

Heat the oil in an ovenproof pan on the hob. Add the seasoned chicken skin side down to cook for 5 minutes until crisp, then remove
