A faff-free roast chicken for the warmer months. “I love washing up!” said nobody ever, so this is the simplest of roasts, all cooked in one tray. It can be livened up with any of the sauces on page 22.

1.8-2 kg chicken

Method

Sit the chicken on the onions in a roasting tray. Halve one of the lemons and insert it into the cavity. Season with salt and pepper, drizzle with olive oil and then roast for 1 hour 50 minutes at 200°c.
