If I had to choose, this would be my favourite one-pot to share with friends and family. Since I first featured the recipe on my Instagram account it has received so many rave reviews. I like to serve it with rice and pak choi or tenderstem broccoli.
Season the flour with the salt and pepper. Cut the stewing steak into large chunks of about 10 by 5cm (this makes it easier to sear) and toss them in the seasoned flour.
Heat 2 tablespoons of the groundnut oil in a large casserole dish and colour the meat in batches, then set aside. Add the rest of the oil along with the onion, garlic, ginger and coriander. Cook for 5 minutes.
