This recipe has put in a regular appearance in my house over the years and is another one that gets past the reluctant fish eaters. The ultimate family comfort dish, it requires a bit more effort but the results are worth it.

Ingredients

  • 1 onion, halved
  • 2 bay leaves
  • 400 ml milk

Method

Put the onion and bay leaves in a saucepan with the milk and simmer for 5 minutes. Lift out the onion and add the fish. Poach the fish for 5 minutes, then lift out and strain the milk into a jug to use for the white sauce.

Add the flour and butter to the same saucepan over a medium heat and whisk to make a roux. Whisk in the strained milk bit by bit until you have a smooth sauce, then s
