Take a basket mould as in engraving, and put it into a charged ice cave for about half an hour before arranging the various custards in it; remove the top of the mould, but leave it in the mouth of the cave while putting in the ice, otherwise this may run and spoil the arrangement of the colours; fill the spaces in the top of the mould which represent cherries
