I’d always hunted morels in Missouri, but then I met Gary Lincoff of the New York Mycological Society and just fell in love with the whole idea of learning more about mushrooms. Gary was so generous with his knowledge, and I think of him often when walking in the woods, looking for mushrooms like the oysters I use in this dish.
