Morel Gratin

Morels are my favorite mushroom to hunt. I collect them on the burns in the Sierras and along roadsides under dying elm in the tri-state area. I even hunt them in my dreams, where I experience the same rush of excitement as when I am in the woods. Fresh morels do not tend to produce as much water as some other wild mushrooms. That said, while cooking them with the onions, if the morels throw off water, you must cook them until the water is mostly evaporated or your gratin will be runny. Be
