The tortilla española is a traditional staple in Spanish cooking and life. It is simple, cheap, nourishing, and very delicious. It can be eaten from morning to night for any meal or occasion. You can hardly spend a day in Spain without being offered or asking for a “¡pincho de tortilla!” The classic tortilla española is made of eggs and potatoes; adding onions is optional. It can also be enhanced with chorizo, peppers, spinach, or whatever is in the pantry. One of my fa
