I fell in love with tempura of all sorts while training as a cook in Japan in the late 1980s. I especially loved visiting tempura shops that had been passed down through many generations. There I tasted some mushroom types for the first time, prepared in this traditional manner. When it comes to the batter, the recipe below works great, but I highly recommend you also check out Welna Tempura Batter Mix. It’s very good and so easy!
