Growing up in an area like the Pacific Northwest, you quickly realize how much food is truly at your feet. The area on and around Mount Saint Helens yields many different kinds of mushrooms throughout the year. I like to make this simple mushroom strudel with my finds, and its flavor defines the day’s hunt.
