I do most of the cooking for our family, because I work in my home studio all day. The kind of artwork I do is so focused that I find cooking dinner every night rather relaxing. We don’t eat as much meat as we used to, and mushrooms provide that same carnal satisfaction. We typically eat this frittata with a salad in the evening. It has a strong mushroom flavor, and the prosciutto adds an extra touch of decadence.
