I absolutely love éclairs, especially when they are filled with maple- or vanilla-flavored cream with a nice dark-chocolate glaze on top. I thought it would be fun to infuse this classic French pastry with fungi by adding candy cap mushrooms to the pastry cream and reishi to the glaze. This recipe has a few steps, but don’t be daunted!
