Being a lazy city dweller, I’ve never really gone mushroom foraging. Through my work as a chef, however, I get to eat them and let someone else do all the hard work. I am mostly vegan when I am at home, so mushrooms regularly take center stage in my home cooking. I find them the perfect substitute for meat, and I now prefer chicken of the woods to real chicken.
