I use Boletus rubriceps, for this recipe, but B. edulis, B. aereus, B. pinophilus, or B. reticulatus or any combination of these will do. Delicious porcini butter recipe and the powder and the porcini salt are sitting in my pantry ready to go. Easy and delicious. Worth getting some good dried porchinis, makes such a difference and they go a long way. Tried the butter whilst getting the flavours how I wanted them, slathered onto some just poached bits of chicken. Lovely!
