  • 175 g (6oz) fillet or sirloin steak, shredded
  • 1 shallot, thinly sliced
  • 2 cloves garlic, thinly sliced
  • 3 tablespoons fish sauce
  • ¼ teaspoon sugar
  • Freshly ground black pepper
  • 1.2 litres (2 pints) water
  • Good bunch of spinach leaves (100 g [4oz]), thoroughly washed and trimmed
  • 1 tablespoon lemon juice
  • 1 red chilli pepper, seeded and finely sliced


First, you need to marinate the beef with the shallot, garlic, a little of the fish sauce, sugar and black pepper. Cover and leave for at least 30 minutes.

Bring the water to the boil and add the rest of the fish sauce. Pop in the spinach and return to the boil. Add the meat and marinade, stir well and then turn off the heat. Stir in the lemon juice, twist on some black pepper to taste, sprinkle on the chilli and serve.
