Now, my little gastronauts,I am sure you will have read previously in this tome that the preparation of the curry paste known as rempah is considered to be a highly esteemed work of art, so do take great care to make it well.

But if you have got this far into the book, you might well have decided that your next holidays must be spent in the East, and so you have probably taken a part-time job to save enough pennies to go, and you don’t really have very much time free. Therefore, under Article 37 of the Floyd Cooks’ Code (1991) you are permitted, under such exceptional circumstances, to pop into your Asian food store and buy some preprepared Thai red curry paste.
