  • 2 tablespoons finely chopped fresh root ginger
  • 4 blades of lemon grass, finely chopped
  • 3โ€“4 cloves garlic, finely chopped
  • 24 roasted peanuts, or cashews or almonds, chopped
  • 6 shallots, finely chopped
  • 30โ€“40 small red chilli peppers, seeded and chopped
  • 1 teaspoon black peppercorns, crushed
  • 1 teaspoon brown sugar
  • 1 teaspoon ground turmeric
  • 3 teaspoons salt


Pop all the above ingredients into a food processor, or use a pestle and mortar, and grind until you have a smooth paste. This will make enough to store for future use. It is extremely hot, so use sparingly.
