We had this for lunch on the beach of one of the small islands off Ko Samui. The joy of it was, we had caught the mackerel ourselves, we had fresh turmeric root and we also had banana leaves. I just cooked the fish in the embers of a wood fire for about ten minutes.
Mix together the garlic, turmeric, salt and pepper. Rub the fish well with the mixture. Wrap in a banana leaf or parchment and then in aluminium foil. Bake in a preheated oven, 200°C/400°F (gas mark 6), for about 20-30 minutes, or until tender. These fish parcels will taste even better cooked over a charcoal barbecue.
