Ingredients

  • 1 teaspoon cumin seeds, roasted and ground
  • 1 teaspoon coriander seeds, roasted and ground
  • 1 teaspoon shrimp paste
  • 1 green chilli pepper, seeded and chopped
  • 2–4 bird’s-eye chilli peppers, seeded and chopped
  • grated zest of 1 lime (preferably Kaffir)
  • 1 blade of lemon grass, chopped
  • 2 cloves garlic, chopped
  • 2–3 shallots, chopped
  • Salt
  • 2.5 cm (1 inch) piece of galangal, chopped
  • 2.5 cm (1 inch) piece of fresh root ginger, chopped

Method

Using a pestle and mortar, blender or food processor, grind together all the ingredients to make a smooth paste.
