  • 3 tablespoons groundnut oil
  • 175 g (6oz) loin of pork, diced or thinly sliced
  • 3 tablespoons seeded and finely chopped green chilli peppers
  • 2 tablespoons finely chopped shallots
  • 3 cloves garlic, finely chopped
  • ΒΌ teaspoon white pepper
  • About 4 cups steamed long-grain rice
  • 2 tablespoons brown sugar
  • 1 tablespoon light soy sauce
  • 90 ml (3fl oz) fish sauce
  • 5 tablespoons roughly chopped fresh basil leaves
  • Sliced cucumber, carrot, tomato - anything you like, to garnish


Heat the oil in a wok or large frying pan and add the pork, chillies, shallots, garlic and pepper, and stir-fry for 3–4 minutes. Add the rice, sugar, soy sauce and fish sauce. Stir well and stir-fry for about 3 minutes, or until the rice is heated through. Add the basil leaves, garnish and serve.
