  • 3 tablespoons groundnut oil
  • 175 g (6oz) loin of pork, diced or thi

Method

Heat the oil in a wok or large frying pan and add the pork, chillies, shallots, garlic and pepper, and stir-fry for 3–4 minutes. Add the rice, sugar, soy sauce and fish sauce. Stir well and stir-fry for about 3 minutes, or until the rice is heated through. Add the basil leaves, garnish and serve.
