  • 225 g (8oz) cooked chicken, minced
  • 4 tablespoons lime juice
  • 2 tablespoons fish sauce
  • 1 shallot, thinly sliced
  • 2 teaspoons chopped fresh coriander
  • 2 spring onions, chopped
  • Powdered dried chilli peppers and powdered roasted rice -grind in a food processor
  • A few fresh mint leaves

Method

Mix together the chicken, lime juice and fish sauce. Then add the shallot, coriander and spring onions. Sprinkle the powdered chilli and rice into the mixture and stir again. Serve topped with mint leaves.
