Ingredients

  • 900 g (2lb) spinach, thoroughly washed and trimmed
  • 2 tablespoons peanut oil

Method

Gently dry the spinach in a salad spinner or in a clean tea towel. Heat the oil in a large wok or frying pan, add the garlic and stir-fry for 1–2 minutes, until golden. Add the spinach and cook for 2–3 minutes. Stir in the fish sauce and the butter and liberally twist over some pepper.
