  • 1 tablespoon finely grated fresh root ginger
  • 2 tablespoons lime juice
  • Salt
  • White pepper
  • 3 tablespoons oil (a mix of sesame and corn is perfect)
  • 1 kg (2lb) fresh young asparagus tips


Make a dressing by whisking together the ginger, lime juice, salt and white pepper, then dribbling in the oil. Leave on one side.

Steam the asparagus until it is just tender. Let it cool a little and then serve with the dressing.
