This is particularly good with seafood.


  • 4 tablespoons tamarind concentrate, dissolved in 225 ml (8fl oz) boiling water
  • 1 teaspoon brown sugar
  • 2 tablespoons fish sauce
  • 2 large red chilli peppers, seeded and very finely chopped


Put the dissolved tamarind concentrate into a bowl. Add the sugar and fish sauce to the tamarind and mix it well to dissolve the sugar.

Garnish with the chillies.
