Date Wine


  • 4 lb. dates
  • 1 gallon water
  • rind and juice of 2 large lemons
  • rind and juice of 1 seville orange
  • rind and juice of 1 grape-fruit
  • 2 lb. sugar
  • sherry yeast
  • nutrient


Chop the dates and boil them gently with the fruit rinds and 6 date stones for ½ hour. Strain off liquor. Stir in sugar and when cool add the fruit juice, yeast and nutrient. Ferment for as long as possible, add extra sugar if necessary. Keep for 2 years before serving. Strong and sweet like a cream sherry.
