Elderberry Wine


  • 3 lb. fresh elderberries
  • 1 gallon water
  • 2½ lb. sugar
  • juice of 1 large lemon
  • burgundy yeast
  • nutrient


Stalk and wash the berries. Mash them thoroughly. Pour boiling water over them and leave to soak for 4 days. Strain and press out liquor. Add sugar, lemon juice, yeast and nutrient and ferment to dryness.
