Ginger Wine


  • 2 oz. root ginger
  • 1 gallon boiling water
  • ½ teaspoon cayenne pepper
  • rind and juice of 2 lemons
  • rind and juice of 2 oranges
  • 3 lb. sugar
  • 1 lb. raisins
  • general purpose yeast
  • nutrient


Crush the ginger and boil with the pepper and fruit rinds for 20 minutes. Strain on to the sugar and chopped raisins and stir well. When cool add the fruit juice, yeast and nutrient. After one week strain and press the raisins and continue fermentation. Serve as a sweet wine.
